Silverwood Black Label LamHam is our gourmet award winning range; the ultimate in unique artisan produce. The 'Full Bone in Leg of Australian Lamb' and 'Boneless Leg of Australian Lamb' have been cured and then naturally wood smoked using beechwood chips and fresh rosemary. The velvety texture of the lamb is prominent and the sweet, buttery flavour is highlighted by the hint of fresh rosemary flavour and aroma. Silverwood Black Label LamHam won a national finalist position in the 2015 Delicious Produce Awards. This one of a kind Lamb product will impress!

Our Unique Story

Andrew & Maree King

Andrew and Maree’s story has always been one of thinking outside of the box. Andrew a fourth generation Merino grower on the family property “Westfield” Est 1889 and “Silverwood” in Longreach, thought outside of the square 15 years ago when the couple diversified into organic farming, growing Organic Dorper Lambs. 7 years later they branched out into their online paddock to plate business “Silverwood Organics”. Queenslanders have been treated to fresh Organic Lamb packs delivered to their doors. They have won numerous awards for quality Lamb and LamHam and the business enterprise. LamHam’s were developed by Maree (a former Home Economics teacher with a passion for food and especially all things Lamb) as a unique Christmas and Easter option for their online customers. In 2013 Silverwood Organics won Queensland Sheepmeat Producers Of The Year and won a trip to Dubai to the Gulf Food Trade Show. It was here that the LamHam idea grew wings. Andrew and Maree have a passion for quality, a love of all things Lamb and a desire to always be unique by thinking outside of the box.

The Silverwood Black Label Full Bone In Leg of Lamb makes a unique and spectacular centre piece for a smorgasbord or celebration table. Cured and naturally woodsmoked using beechwood and fresh rosemary, and vacuum sealed for freshness. Yes, they glaze beautifully and are perfect for a hot delicious baked and glazed dinner with all of the trimmings. The Lamb bones make a rich and unique LamHam and pea soup.

The Silverwood Black Label Boneless Leg of Lamb is one of a kind gourmet product that is convenient for portion control. Perfect for shaving, the paper thin slices accentuate the buttery texture of the Lamb, which is ideal for point of difference charcuterie boards, unique pizzas, glamorous open sandwiches or bruschetta's. Cured and naturally woodsmoked using beechwood and fresh rosemary, and vacuum sealed for freshness.

Care Instructions

Keep refrigerated below 4 degrees.

  • Remove your ham from the vacuum bag 24 hours before carving.
  • Keep your ham refrigerated in a vinegar soaked ham bag or cotton pillow case.
  • Your ham will last for 45 days in the vacuum pack and then 3-4 weeks out of the pack if refrigeration temperature remains below 4 degrees and use of the vinegar soaked cloth bag is used.
  • LamHam is also great glazed. Use your favourite glaze mix and wrap the lamb tightly in foil to prevent drying out.
  • Cook on 180°C for 40min then reduce heat to 150°C for a further 40min.
  • The bones make a unique Pea and LamHam Soup.
